My first guest is a Professor Emeritus of the Department of Health and Exercise Science at Colorado State University in Fort Collins, Colorado. His research emphasis over the past 20 years has focused upon the evolutionary and anthropological basis for diet, health and well being in modern humans. Dr. Cordain’s scientific publications have examined the nutritional characteristics of worldwide hunter-gatherer diets as well as the nutrient composition of wild plant and animal foods consumed by foraging humans. He is the world’s leading expert on Paleolithic diets and has lectured extensively on the Paleolithic nutrition worldwide. Dr. Cordain is the author of five popular bestselling books including The Paleo Diet, The Paleo Answer, and The Paleo Diet Cookbook, summarizing his research findings.

Start by thanking you for coming on The Empower Hour and years of support. I remember years and years ago when I originally read and was awakened by your original book “The Paleo Diet” I reached out to you for ideas on where to go from here if I wanted to become a nutritionist without being brainwashed by mainstream nutrition you were incredibly helpful. It’s amazing how far Paleo has come into what’s now the fastest growing diet across the country. What do you think we can attest this awakening to?
WHEN YOU ADOPT THE PALEO DIET YOU MAY:

You’re truly a pioneer, having brought to light a way of eating that could truly save humanity. I know when I started with Paleo over 10 years ago, I was ostracized as a freak or weirdo. What inspired you to be a pioneer and what was it like for you bringing this old way of eating to a new world?
“This is a vision for humanity. It’s a gift. An idea that transcends any single human being. It helps us so we don’t have to worry about health, well-being and diet and focus on what we want to do with the rest of our lives.”

As humans, one of our biggest benefits, which is also one of our biggest detriments, is that we have removed ourselves from the food chain. The benefit is that while it may be frustrating being stuck in traffic on our way to work, at least we don’t have to worry about being eaten alive by a saber tooth tiger. The detriment is that the beige colored crap we ingest in the drive through on our way to work is the furthest thing from real food. What are your suggestions on how to get the best of both worlds?
“70% of calories of Average American diet are from refined sugars, refined grains, refined vegetable oils, and dairy. Combined into processed foods: donut, bagel, cereal, ice cream, pizza. All made from these same 4 ingredients.”
One of the negatives I’ve seen with the modern implementation of the Paleo diet is a how many bacon obsessed vegetable phobic individuals have claimed to be Paleo but are actually following Atkins. Can you tell us your opinion on both heavy bacon consumption and the quantity and variety of vegetables eaten by our Paleolithic ancestors?
“With Paleo diet, can’t eat the same foods our ancestors ate, but we can eat the same food groups.”
“If it doesn’t spoil quickly and it never had life in it, either plant or animal, don’t eat it.”
“There was no single Paleo diet. Diet prior to agriculture varied according to geography, season, latitude, cultural biases. Range of diets our ancestors ate. However, always ate fresh, wild, plant and animal foods.”

This Week’s Challenge is to GET CARB CONSCIOUS
While you may or may not decide to go Paleo, this week I challenge you to get carb conscious. For this upcoming week, there are 3 levels that you can take this challenge. Level 1, write down all carbs you eat each meal. Level 2, write down how many servings of veggies, fruits, grains you have. A serving is roughly a cup or a piece if it’s fruit. Level 3, count grams of carbs and separate them between sugar, fiber, and starch.
It’s important to know that not all carbs are created the same. Most people, even fitness professionals, don’t understand what protein carbs, and fat do in the body. Even more, they have no idea about what the carb components of sugar, fiber, starch do in the body.
Most people think sugar gives you sustained energy. Yet the truth is that sugar spikes your energy and then it crashes. Sugar also gets stored in your fat cells. It’s not the ideal fuel source and its as addictive as a drug.
While most people know that fiber makes you regular, that is about where the education stops. Fiber not only promotes healthy bowel movements, but it keeps you from overeating.
Starch is the most confusing of nutrients. Most people think that starch gives you energy, is required for a complete meal, and leaves you full and satisfied. The truth is, starch turns into sugar rapidly in the body. There are adequate amounts found in certain veggies like sweet potatoes, and most high starch foods are soft and squishy so they make you soft and squishy.
SO get carb conscious and learn that this may be a key ingredient that can help you get lean so you can live the life you want, the way you want it!
